Kettle Sour with Black Currant

This “Kettle Sour” beer was made with a slightly different grain bill from that of the Freedom of Speach ( using Vienna malt instead of wheat), but it was also made with the addition of nonfat plain Greek yogurt to the Kettle.

The Lactobacillus strains in the yogurt eat some of the sugars and produces the lactic acid, which in turn imparts the tart character to the beer. After that, we boiled the wort to kill all the ‘Lacto’ (so that we don’t infect our brewery) and added black currant concentrate to the fermenter.

We pitched a Saison yeast to get additional fruitiness from the esters produced during the main fermentation of the beer… black currant was then added again in the serving tank to give the beer a pinkish hue, and some sweetness to balance the acidity.
