This big, barrel-aged Belgian-style Quad (named for Iggy Pop's "The Passenger") slept 20 months in a French oak barrel with Brett Brux yeast and five gallons of Italian plum puree. We finished it by lightly blending in some beer from our Freedom series. It arrived at its final destination rich in stone fruit and dark malt, with an equal balance of oak, funk, and acidity.
