This same base beer became Jamo-nilla 2017, after a short aging in Jameson Irish Whiskey barrels and the addition of vanilla. We designed this beer to finish with a little extra residual sweetness to balance any spirit character from the barrel during a shorter-than-usual aging period. After the Jameson barrels were full, we had enough beer left over to fill a handful of our own barrels. One such barrel was a score, a WhistlePig 10 Year Rye barrel. After about a year, one of the barrels (a WhistlePig 10 Year Rye barrel) developed a small leak which couldn't be addressed. After a second round of aging in a new barrel, the beer is stronger, beautifully offsetting the elevated sweetness and letting the palate wonder upon the endless complexities derived from malt, oak, and time.
