Our 2012 Replicale submission to the Illinois Craft Brewers Guild. This year, 15 Illinois breweries made a similar base beer, each choosing a different Belgian ale yeast for fermentation. The yeast we chose is clean, with good ester fruitiness and a lightly tart complexity. It is light-medium bodied with a dry finish and medium hop bitterness, and at 4.7%, it is a refreshing and sessionable Belgian-style ale.
