Deep Wood Series Release - Cuvée de Grâce and 10 Year Beer

We’re closing out the 2019–2020 Deep Wood Series with our first-ever barrel-aged blend in cans and a two-year-aged Barleywine celebrating ten years of the Revolution.

Cuvée de Grâce

Nodding to the methods and traditions of our brewing forebears, we scoured our barrel stacks for the most unique and expressive components we could find to bring to life this limited edition Cuvée, never to be replicated. A blend of multi-vintage Oatmeal and Rye Stouts establish its full-body and obsidian veil, while a selection of oaky two-year-old Barleywines and Scotch Ale pacify roastiness with their rich, matured malt structures. Ten Year Beer

On the occasion of our tenth anniversary we present this sophisticated-but-approachable celebratory ale. English Barleywines aged in bourbon and rye whiskey barrels between twelve and twenty-four months establish a base of stone fruit, vanilla, and graham. A blend of sweet and tart cherries lends soft sweetness, acidity, and hue. Find something to celebrate now or store cold.

Draft-only Variants

Project Sanctuary #20 - Dumb All Over (AKA Double Barrel V.S.O. Boss Deth Jacket with Coffee and Roasted Walnuts)
15.6% ABV - Single Barrel

This one-of-a-kind cuvée selected by Cellarman Andy Lautner is 70% WhistlePig Boss Hog Armagnac barrel-aged Straight Jacket and 30% Jack Daniel's barrel-aged Deth's Tar aged for one and two years respectively before being blended and aged an additional 20 months in a single Heaven Hill bourbon barrel. At once dry and bracingly boozy, the past 3-4 years of evaporation have concentrated the malt structure yielding a smooth, sweet sipper with notes of dark chocolate, vanilla, caramel, and oak.
Oh yeah -- and we put a bunch of coffee and walnuts in there too.

No Journey Psych-outs
Double Barrel-Aged Imperial Stout with Vanilla
16.5% ABV - Single Barrel - Single Keg

This begrudgingly nuanced Imperial Stout was aged in bourbon and Irish whiskey barrels and finished in a single 15-gallon Journeyman Rye barrel with whole Bourbon vanilla beans.

Very Special Old Very Mad Cow
Barrel-aged Imperial Milk Stout
9.7% ABV

The first beer ever released as part of the Deep Wood Series makes a cameo with this two-year variant we've been hanging onto for a couple two-tree years. Lactose offers just enough sweet balance for the oak and bourbon in this otherwise restrained example.

Cuvée de Triomphe
Blended Sour aged in Wine Barrels
8.0% ABV

This approachable sour ale was aged in a pair of Tawny Port and Madeira wine barrels for one year with Brettanomyces. A touch of Freedom of Press cuts the funk and French oak tannin while providing a gentle lactic acidity.

2016 Totally Uncalled Four
Barrel-aged Quadrupel with Chamomile - 13.9% - Single Barrel

Matured for 30 months in a Woodford Reserve barrel, this strong, dark time capsule eludes to a V.S.O. Series still years away from conception in late 2013. Malt complexity, supersized body, pronounced and balancing oak tannin, it's all here. Spicy, fruity Belgian esters and chamomile aromatics have relaxed over the subsequent six years, making this one of the most refined and complex beers in our library.

WHERE WILL THESE BEERS BE AVAILABLE?

Both beers will be released in cans at the Revolution Tap Room, located at 3340 N. Kedzie Ave. There will be limited distribution of 10 Year Beer cans to select retail accounts, and Cuvée de Grâce will remain a brewery-only release, with can sales starting at the Brewpub on the following Monday.

WILL THE RELEASE EVENTS HAVE DRAFT-ONLY VARIANTS?


Definitely - after unveiling our Sanctuary Barrel Program last year, we’re more excited than ever to share truly one-off beers with our biggest fans. We’ll announce the variants during the week leading up to each release on our website and the Facebook event page.

CAN I BUY THE VARIANTS IN CROWLERS?


Not during the releases -- we want to give everyone a shot to experience Marty's one-of-a-kind creations. If we have enough left over after the release to pour crowlers, we'll update our social media with the variants and quantities we have available. Many of these wonderful beers live their entire lives on draft, and never see a can or crowler, so join us for a party and toast to the magic of American oak!

IS THE BEER READY TO DRINK RIGHT AWAY?

All of our Deep Wood Series beers are already aged between 6-36 months (depending on the beer) before we package them. They’re absolutely ready to drink right away, and we don’t recommend piling them on a lonely shelf for years at a time. Seriously - we made these beers for you to enjoy. Bottoms up!

HOW DO THEY AGE OVER TIME IN A CAN?


We flash pasteurize our Deep Wood Series beers. We’ve also tasted many of our beers aged over a year in cans and haven’t picked up any big changes in flavor apart from the effects of normal aging. And again, we really think they’re great now and hope you will too.

IS THERE A PURCHASE LIMIT AT THE RELEASE EVENTS?


We’ve set a limit of 3 four-packs per customer for both Cuvée de Grâce and Ten Year Beer.

HOW LONG WILL EACH BEER BE AVAILABLE FOR?


We won’t know that until we see the turnout at the release events, so we’re not able to predict how long each beer will be available.

I CAN’T MAKE IT TO THE RELEASE DATE. CAN YOU SAVE/SHIP ME DEEP WOOD SERIES BEERS?

Unfortunately, once the beer is gone, it’s gone. We don’t hold any back for retail purchase. We are also unable to ship beer directly to consumers under federal law.

WHAT IS THE BEST-BY DATE FOR DEEP WOOD SERIES BEERS?


We do not provide a best-by date on our cans. While the beer may taste great in the future, our aluminum can supplier follows the industry standard and only warranties the integrity of our cans for 12 months.

CAN I USE CREDIT CARDS FOR MY PURCHASE?


Packaged Beer sales will accept both credit cards and cash, however draft sales inside the release event will be cash only to ensure the fastest possible service.

WILL THERE BE FOOD AVAILABLE AT THE RELEASE EVENTS?


For this special release, we'll be serving food pairings from the Revolution Brewpub kitchen team. Each will be $3, and come with a beer pairing suggestion. Keep an eye on our social media for more information closer to the release!
