The continuing adventures of Revolution & Half Acre close out the 2023–24 Deep Wood Series alongside V.S.O.R. in hand-selected barrels from Binny’s. If things have to end for now, they’re going to end BIG. Join us, and the team from Half Acre for the last Deep Wood Series release of the season.

Preorders will open at 9 a.m. on our webstore on Tuesday, January 23. Season Ticket holders can pick up beginning Thursday, January 25 during Taproom hours. Pickups for the general public will begin at the release party, which starts at 2 p.m. on Friday, January 26 in our Taproom (3340 N. Kedzie Ave.)
DRAFT VARIANTS
On & On Part 3 Component One (Pale/Sweet) — 16.2%
This “Barleywine” component of our Deconstructed Stout boasts ample mid-palate sweetness with a pleasant balance of malt expressions both bready and fruity. A yearlong rest split between Wild Turkey and Russell’s Reserve bourbon barrels have adorned this sweeter portion of the beer with enough tannin and alcohol to be its own standalone brew.
Blending tip: use this component to increase overall body, sweetness, and fruit notes.
On & On Part 3 Component Two (Dark/Dry) — 16.2%
This “Extra Stout” component of our Deconstructed Stout is dry, boozy, and tannic, with a prominent roastiness and a subdued malt profile leaning more bready than fruity. Aged one year between both Wild Turkey and Russell’s Reserve barrels, this component might be challenging on its own.
Blending tip: use this component to increase color, roastiness, and perceived oak/booze while reducing sweetness.
On & On Part 3 Component Three (Double Barrel Deth’s Tar 2023) — 16.5%
This “Slightly sweeter but still dark and double barreled” component of our Deconstructed Stout is 2023 Deth’s Tar, rebarreled for two additional months in a Russell’s Reserve bourbon barrel. Not originally slated for the On & On Pt. III blend, this component was included to bolster sweetness without detracting from roastiness or alcohol concentration.
Blending tip: use this component in place of Component Two to increase sweetness and complexity while gently reducing roastiness.
Rioter’s Reserve 2024 — Triple Barrel Double French Oak Amburana Finish V.S.O.D. — 19.0%
This exquisitely absurd single barrel of Very Special Old Deth was triple barrel aged in Weller, Blanton’s, and 1792 casks, given a double dose of single-origin Troncais Forte French oak, and finished in a Brazilian Amburana barrel. Flaunting a cosmos of malt and wood-derived aromatics spanning baking spice, vanilla, cherry, coconut, and maple, and legs like Lili Von Schtüpp, each sip is a celebration in your mouth.

Double Barrel Catch Hell — 16%
Double Barrel Imperial Stout with Vanilla and Cinnamon. It pours a heavy, Vantablack color. The aroma has a bunch of wicked little things, like bellying up to a Fannie Mae sampler bar with a two-finger iced bourbon sipper. Welcoming it in, FULL MELD flavor bond of distillers select bourbon, dark chocolate buttercream vanilla cake dusted with cinnamon. Barely a whisper of its 16% ABV inside this power stout.
Green Torch — 4.5%
Green Torch hits right between the eyes, super clean lager pushed lake side tropical with a sticky dose of lime. Cracker crisp, lime-aid citrus with details tucked into the corners. Easy curls with this one, at 4.5% ABV.

Ryewine
This exceptionally discerning Ryewine blend uses hand-selected bourbon and rye barrels from Binny's Beverage Depot to burnish the luminous malt complexities formed by a two-year stay in that premium oak. Inviting yet balanced sweetness is counterweighted by aromatic oak and assertive rye, with ambrosial notes of maple and vanilla evoked at every turn.

Double Barrel-aged Imperial Stout
Another trip through the looking glass hand-in-hand with our adventure buddies at Half Acre Beer Co. On & On Part 3 is the quantum result of both paths taken – a standalone pale, sweet component and another dark, roasty component spent time in separate barrels before rejoining and blending into a Stout fluent in the language of Barleywine -- combining the sweet, complex depths of aged malt without losing the shadowed primal note of roasty warmth.
