For our first ever Berliner Weisse, we used the second runnings from our Executive Order Wheatwine mash to make the brew. The style is known for its light body, and tart refreshing acidity. We did a kettle-souring with yogurt to promote that... Traditionally it can be served with raspberry, or woodruff syrup to balance the lactic acid. Ours isn’t overly acidic though, so it should be easy for most people to drink on its own if they choose not to add Woodruff Syrup to it.
