We bumped up the gravity to be more like that of a barleywine this year, but twist is that this beast is made with 50% white wheat (and 50% 2row). Though there is malt sweetness up front, it is more reminiscent of honey-like notes versus the more caramel/toffee-like flavors of most barleywines. We wanted the hops to come through as well, and we used a good amount of Amarillo and Centennial at the end of boil, though we did not dry-hop it at all. About 2/3 of the batch went to bourbon barrels (Heaven Hill), and we’ll see that-a.k.a. Filibuster- in about 6 months...
