Fausten Weizenbock, the strongest of our wheat beers, has a mash bill that consists of 53% German wheat malt and a host of other imported grains such as Dark Munich, Crystal, Melanoidin and Carafa III, this authentic representation of the style is both complex and potent! Wonderful flavors and aromas of caramel, toasted bread and hints of baker’s chocolate are extracted from these malts with the ever present fresh banana character lurking in the background from the Weihenstephan yeast strain we use for fermentation. Two additions of German Magnum and Spalt Select contribute just enough bitterness to provide balance to this dark ale. Although this is a rather substantial beer, the large proportion of wheat malt and the other specialty grains contribute a creamy texture to smooth out the higher level of alcohol present!
