Technically, this is not a Kolsch Bier, because it was not brewed in the city of Koln (Cologne), Germany. It is fermented with a unique ale yeast that ferments out at cooler temperatures than many other ale yeasts, so it doesn’t produce as many fruity esters as many styles, but has complexities almost reminiscent of some white wines. The style is light-bodied, crisp, and refreshing – in part due to its extended cold aging/maturation- similar to that of a lager.
