Hecker IPA

This IPA was inspired by our Kolsch Bier- so we worked off the malt bill of Ghost Ride to produce an India Pale Ale that retained much of its extra pale hue. We harvested some of our Kolsch yeast from the Alt, and fermented it a bit warmer, to get a bit more fruity complexity from it, which goes well with the citrus/pineapple hop notes that we get from the blend of ZYTHOS / CASCADE hops. It also helped it to ferment a bit drier than our house ale yeast.
