Ours is an industry that demands innovation, and its history is written via the seismic shifts in consumer preferences that reshape the conversation. In the 80s and 90s, it was beer made on-site, by a brewer who wasn’t making macro lagers. Later, it was big, piney IPAs redolent of the coast; then thick, smooth stouts brought to life in bourbon barrels. And today, beer fans are lining up for, trading, and checking in New England-style IPAs (or Hazy IPAs).
